Can you change the AirPlay display name?
I dont want to expose the products name to every apple device on my network

Yes you can, using the web interface. Just enter the IP address of your Upsampler (or other network-enabled device) in the address field of your browser, click on Device Settings and it is the first option.
However be aware that this may or may not obscure the actual device identity (which senders always broadcast) depending on which AirPlay receiver you are trying to connect from. For instance whereas iPhones only display the given name, Roon displays the given name and the device identity:
